a few of my favourite things

Right now I am growing pumpkins, tomatoes, blueberries, corn, varieties of lettuce, radishes, carrots, zucchini, acorn squash, watermelons, bell peppers, strawberries, currants, sugar peas, mint, oregano, basil, chives and cilantro in my garden. We begin planting seeds in April and we just started harvesting.
I love gardening, I even like weeding. I especially love eating what we've grown in our garden.

This is the first year that I have grown cilantro. It grew quickly from seed and we have just begun using it to make homemade salsa. My hands smell so good after cutting cilantro and squeezing lime juice. We bought the best tortilla chips at Marks and Spencer's  and ate chips and salsa for dinner one night washed down with large glasses of ice-cold limeade. We left the salsa really chunky and hand chopped everything but next time I would like to take half of the salsa and blend it into a liquid and then add the chunky half at the end to give it some texture.

  • 6 - 8 large fresh, flavorful tomatoes about 6 cups

  • 2 scallions, finely minced

  • 1 cup FRESH cilantro, chopped, no stems

  • 6-8 cloves garlic, minced

  • 1 red pepper, chopped

  • 2 yellow peppers, chopped

  • 1/4 cup olive oil

  • 3 tablespoons FRESH lime juice

  • Salt and Pepper to taste


  • Chop up the tomatoes and mince the scallions. If you can't find scallions, you can substitute fresh onion. Mince the garlic.Split the pepper in half and clean out the seeds and membrane and then chop into small pieces.
    Once all the ingredients are prepped, add them to a large bowl and stir gently until well combined. Cover, and refrigerate for at least one hour.
